From the Earth to Your Plate: The Journey of Italian Truffles

Truffles are one of the most prized delicacies in the world, and have been ever since they began tantalizing French taste buds in the 17th century. Their natural unique taste can either be cooked alone or through existing recipes that create a plethora of aromas and tastes that complement each other. But the journey of a truffle from being buried deep in the Italian earth to then being on your dinner plate is a complicated and difficult one.

Most fine naturally grown truffles are found in the Mediterranean fields of Europe, particularly in Italian regions where the most exquisite truffles grow. Getting a truffle from the earth is not easy, due to them being so deeply buried in the areas surrounding oak trees. Their scent must be tracked down by farmers with the aid of pigs and dogs. Once discovered, a truffle has only a short time at its best before it loses its high quality taste. It must therefore be packaged and made ready to sale as soon as possible.

Truffles have been popular with the upper class elite in Europe since the French began enjoying them in the 17th century. It wasn’t long before their availability increased and by the late 19th century they were soon being enjoyed by people from all different backgrounds. However, a series of problems with European crops radically reduced their numbers, and the effects of bombing raids on European soil during the First and Second World Wars greatly diminished their numbers and ultimately stopped them from being so widely available. Unsurprisingly they soon returned to upper class dinner plates only.

There are two kinds of truffle, black truffles and white truffles. White truffles expire quicker than their black counterparts and need to be processed ready for sale immediately after they are taken from the earth. Black truffles are also best when eaten relatively soon after being unearthed by more often than not they last longer. Whatever truffle you purchase, it is best you cook it as soon as possible. If you are not able to cook your truffle as soon as you would like, a good quality truffle cooking oil will enhance the flavor of truffles in a meal as they are made from genuine truffle extract.
