Spinach is an edible flowering plant native to central and southwestern Asia, it is an annual plant which grows to a height of 30cm. The word ‘spinach’ dates back to the late fourteenth century and is thought to have originated in Persia. Traders brought spinach to India and China where it was dubbed “Persian Vegetable”. The first record of the spinach plant was recorded in Chinese where it was stated that spinach was introduced to China by way of Nepal in 647 AD.

Spinach appeared in England and France in the 14th Century via Spain and became a very popular vegetable because it matures in early spring when common vegetables are scarce. The first cookbook to include spinach was in the “Forme of Cury” published in 1390. In 1533, then Queen of France, Catherine de Medici, loved spinach so, that she ordered it be served with every meal. To this day, dishes made with spinach are known as “Florentine” which reflect her birth place of Florence.

Spinach has a large Vitamin K content, because of this, spinach juice was added to wine and given to World War II French soldiers who were weakened by hemorrhage and blood loss. Vitamin K is necessary for the normal clotting of blood.
