Meatless Casserole Dish

To accommodate my son's veggie diet I had to learn to prepare meatless meals. I needed a plan and found that cooking vegetarian casseroles was the easiest way to fix one main meal for the whole family. I could then satisfy his veggie diet and include meat as a side dish for everyone else.
Finding the perfect blend of ingredients in a Vegetarian Casserole proved challenging. As I tried new recipes I found some were to bland, the flavor just wasn't there. Another issue was the amount on veggie ingredients a vegetarian casserole required. Having to many vegetables in one dish was great for my son but no so pleasing to the rest of the family.
I was introduced to the Vegetarian Casserole Dish called Spanish Rice Frittata by a family friend who happened to be a Vegetarian. Boy I'm glad she gave it to me. This was just what I was looking for. The recipe called for the healthy green veggie foods my son needed but also a delicious blend of flavor my family would enjoy. This is the perfect recipe combination for both types of eating habits into one main meal. We serve this as the meatless main dish and a prepared meat on the side. It's a great recipe for both Vegetarians and also those who desire a healthy meal.
Spanish Rice Frittata Due Credit: family vegetarian friend Preparation Time: Apprx. 10 minutes Baking Time: About 30 minutes
Ingredients: 1/2 cup finely chopped onion 2 tbsp. butter or margarine 1 1/2 cups spinach, drained, cooked and chopped 1/4 tsp garlic salt (optional) 3 cups cooked rice 1 1/2 cup grated cheese 4 eggs, slightly beaten 1/2 cup milk 2 tsp salt 1/4 tsp pepper
Directions: Add butter and onions to a saucepan on medium heat and saute until tender. Combine rice, spinach, garlic salt and 1/2 cup of cheese to the pan and mix well. Stir milk, eggs and salt and pepper then add to rice mixture. Pour it all into a well greased casserole dish and top with remaining cheese. Bake for 30 minutes or until set in a 350 degree oven.
This is a great meatless main dish. Cooking easy veggie meals is the best way to introduce your family to the taste of a new veggie food without the instant disapproving look my family had given me so many times.
