Hearty Corn Salad
"Hearty is the operative word. This salad makes you feel like you
are eating a stew, but it digests very easily.
Makes 4 Servings
3 portobello mushrooms, chopped
1/3 cup balsamic vinegar
1/3 cup olive oil
3 tablespoons pure maple syrup
2 tablespoons sliced scallions
1 bell pepper (any color), chopped
1 cup grape tomatoes, sliced in half
1/4 to 1/2 pound baby lettuce
4 ears fresh corn, kernels but from cob
Marinate the mushrooms for 1 hour in the vinegar, olive oil, and
maple syrup. Set aside.
Mix scallions, bell pepper, tomatoes, lettuce, and corn in a large
bowl. Toss well. Divide lettuce mixture onto plates and top with
2 to 3 heaping tablespoons of the mushrooms. Dress salad further,
if desired, with raw caesar dressing.

Dr John is a native New Englander. He was born and raised in Cambridge, Massachusetts surrounded by a big italian family. While growing up sports was his main passion. If he didn’t have a basebll glove in his hand then it would probably be a hockey stick. Thankfully his mom knew that sports was a good activity for kid so she supported him fully and she never missed a game or practice.
