A Healthy Vegetarian Lasagna Recipe

By: Jane Simmers

Looking into trying out a vegetarian diet and worried that there might not be any tasty recipes to satisfy your palate? Well, you may be surprised to find out that anything that you can cook with meat can be cooked with vegetables. This even includes your Italian favorites like pizza and pasta. So before you give up on trying to be a vegetarian, look into this vegetarian lasagna recipe first and see if it works for you.

Step 1

This step is all about the ingredients. This vegetarian lasagna recipe requires these following things: one fresh eggplant, frozen spinach, lasagna noodles, low-fat cottage cheese, meatless sauce, mozzarella cheese, tomatoes, salt, pepper, and parsley flakes. The healthier cheeses you use in this dish, the better. All the ingredients in this list can be found at your local grocery store.

Step 2

What you will want to do next for the vegetarian lasagna recipe is defrost the pack of spinach that you have. When defrosting the spinach, it might end up really soggy so try to drain as much water from it as you can. Using a clean cloth might help you do this or you can also use a colander.

Step 3

Next step is to cut the eggplant in round and thin slices. Do not make them too thin but thin enough that they will not be too hard to cook. Then lay the slices on a cloth and lightly salt them. Put another cloth on top of the ones you salted and then repeat the process with the eggplant slices that you have left.

Step 4

All lasagna, even a vegetarian lasagna recipe like this, is dependent on how it's cooked. For the noodles, place them in a pan and place that pan on top of a cookie sheet that is heated on an oven. This will help evenly distribute the heat and the lasagna noodles will be cooked in about one or two hours or when you find they are tender. To save time, you can work on the spinach and cottage cheese mix and add a little salt and pepper for flavor.

Step 5

This part of the vegetarian lasagna recipe might test you. Get a casserole pan and spread some sauce into it. Add a layer of the noodles you just cooked and then add eggplant, more sauce, cottage cheese, spinach mix, and another layer of noodles. Do this process again and again until you fill the dish or until you are satisfied with how thick your lasagna is.

Step 6

This is the final and easiest step in the process. All you have to do is top off the final layer with mozzarella cheese, tomato sauce, and an even layer of thinly sliced and peeled tomatoes. Lastly, sprinkle it with parsley flakes.

After you have prepared all of this, bake the dish at a temperature of 350 degrees and leave it on for about an hour. Once you notice that the eggplant becomes soft and brownish, you can remove it and you can start eating once it's a little cooled. This is an easy and tasty vegetarian lasagna recipe you can cook to satisfy your craving for good and healthy food.
