A Cake Recipe Using Chocolate and Zucchini (Courgette)

We all should do a lot more home cooking than we do right now, and we will speak more on that subject later on.

But before that, here is a tasty and unusual cake recipe to start your mouth watering.

The ingredients might appear a little odd for a cake, but I really do suggest that you have a go anyway.

You will be amazed and delighted that you did.

A Recipe for Cake Using Chocolate and Zucchini (Courgette)

Ingredients Needed:

One teaspoon ground cinnamon
One t. vanilla flavour
2 0.5 Cup plain white flour
Half C. normal sugar
Two teaspoons bicarb of soda
1 C. brown sugar
Half C. dairy butter
three zucchini, about 6" in length, cut into thin shreds (approx. two C.)
half a cup oil
1 t. common salt
Half C. buttermilk
3 fresh eggs
four Tablespoon cocoa powder
0.5 Cup to 1 C. choccie chips

Heres What You Need To Do:

In advance, preheat oven to 325 F / 160 C / Gas Mark 3.

Lightly grease a 9" x 13" cake tin and place to the side.

In mixing bowlmix the brown and white sugar, oil and butter.
Break in the eggs, the buttermilk and the vanilla and stir well until well mixed.

With a sifter or sieve, sift the cinnamon, cocoa, flour, salt and soda until well combined and lump free.

Stir both mixtures together

Stir in the shredded courgette and give it a few stirs.

Put everything into the 9" x 13" tin and sprinkle the top with chocolate chips.

Put into the hot oven and cook for about 45mins.

Allow the cake to cool down a little, remove from tin and place on a rack to cool before serving.

So Why Cook at Home?

Home cooking can be a huge boost to family morale. In these demanding times, family meals are usually the only opportunity that we get to have a chat with our loved ones. The pressures of modern times means that less people are prepared to use up their free time to be a home chef, preferring to have a meal in a restaurant, often, for unavoidable reasons, by themselves and this is not the best option for any family.

Home cooking has numerous advantages. It is often much more cost effective, usually a good deal quicker, and, as it results in fewer car journeys, is a lot greener.

The plus factor that many family members are bowled over by, is the fact that it is regularly quicker than dining out. When you count the time spent preparing to leave the house, finding the bistro, the time taken for the waiter to take your order and then the time taken for your food to arrive, it should be quite clear that preparing meals at home is significantly faster.

Preparing meals at home is better for your health, that's the truth, but it is only true if you don't take the lazy option. Simply eating at home isn't healthy if you are serving junk food and pizzas. This sort of meal is as a rule quite poor quality and clearly nowhere near as good for you as a tasty home cooked recipe using handpicked fruit and vegetables.
